In order to harvest healthy grapes of high quality from the vines, hand-harvesting is crucial. Only so can the best grapes make their way into the cellar. Suboptimal quality grapes stay in the vineyard. For a controlled, gentle and spontaneous fermentation it is imperative to have healthy grapes.

SELECTION

An additional step to obtain optimal grapes for spontaneous fermentation is hand-selection in the cellar.

 

Many other parts of our work are done by hand as well.

On average, 6 pairs of hands handle each bottle of our

wines before they arrive at your table.
